Opened in Taipei in 2018, TsukiyoIwa is a Japanese restaurant that specializes in crab cuisine. I met Mr. Umezaki of Tsunatori Fisheries before the restaurant opened. I received some crab as a sample and found it a completely different level of deliciousness to any crab I had ever tasted before. Since then, I have long wanted to use it in my dishes. After a year of getting the restaurant up and running, because we have received a lot of requests from customers for live crab dishes, we decided to buy crabs from Tsunatori Fisheries. Now our crab dishes are very popular with customers and the restaurant's recognition increased considerably for their deliciousness, so we are very grateful to Mr. Umezaki.
We serve a variety of crab dishes, including king crabs, snow crabs, and hair crabs, but the crabs we buy from Tsunatori Fisheries are exceptional. They are caught in deeper water than most crabs, and perhaps because they grew up eating a different kind of food, they are so sweet and meaty, and the crab paste has a very rich flavor. As well as the excellent freshness, the crab is of a very high quality -- its succulent flesh is so stuffed that it swells when cooked, which is very special and hard to find elsewhere.
Tsunatori Fisheries is also thoroughly meticulous about transport management, and they deliver the crabs to Taiwan in the best condition within a day of them being landed. For example, even the cooling conditions are well-thought-out, with the amount of ice and temperature control being finely arranged, so that the legs of crabs do not fall off and the quality does not deteriorate. This is truly amazing. Thanks to Mr. Umezaki's professional attitude, I am always impressed by the excellent condition of the crabs when I open the box,
Every winter we serve a “Matsuba Crab” (a brand name for snow crab caught around Tottori Prefecture) with Tsunatori Fisheries tags, which has been well received by our customers. They often ask us when they can start enjoying the crab and want to make reservations as soon as they know it will be in stock. Our Taiwanese customers, who travel around Japan even more than Japanese people and are familiar with the crabs from the Sea of Japan, also acclaimed our crab dishes, saying “I went all the way to Japan, but the crabs I eat in Taiwan are more delicious!” We feel that our dishes have become something special for Taiwanese people.
This year marks the sixth year since TsukiyoIwa opened, and we have now been doing business with Mr. Umezaki for five years. The crabs from Tsunatori Fisheries are a winter specialty at our restaurant, and every year they are well received from our customers. The number of customers making reservations for crab dishes is also increasing. We would like to buy more, but because they are a natural product and there is a limit to the quantity, sometimes we have to turn down reservations. We want to continue to cooperate with Mr. Umezaki, who is as passionate about crabs as we are, to spread the quality of this rare premium crab in Taiwan.
